is there any benefit in having a 10player roster outside of subbing? ie, can i run two teams across 2 different leagues etc:

no you can´t play in 2 different leagues at the same time, but they give important streaming revenue.

Actually, being able to have an "Academy" team and tryout more strategies could be great !
I wish that Ranked Team Games can improve champion stats for each players as well.

Not really, the players streaming is more than their wage and the extra maintenance costs. It's 100% necessary to have extra players if you want to succeed. :)
