In the Staff tab under "Yours", there's a button on the right side of the list of coaches that allows you to fire the coach. It does cost a pretty hefty fee, but it's there.

It would be helpful if there was a way to take a bid away incase you bid on the wrong person. Maybe limit it like one rescind a day so people can't abuse it and it'll correlate with the hiring of one staff member a day (Although, it might need to be 2-3 to cover the PR people as well)?
