My team is winning basically every Ranked Game and League game, and my best players are doing decently in soloqueue, but somehow I have basically the lowest star player elo in the game?

Star player elo is, well the elo of your (star) player...
So the highest SoloQ elo in your team . Teamranked nor league games won't affect that.
You can click on a player to assign soloQ games. just as streaming.

That might be because you look at your "report". This one just tracks down your data once per day at the daily update.
So it should be fine with the next update.

I did for the first couple days, but not since, and that still doesn't account for the fact that the "star player elo" listed on my reports page is a good 300 off from my ACTUAL best players soloqueue elo.

So it's still a thing? Your star player elo should be 1421 by now. What does the report show? Maybe even screenshot it.
Can confirm that I am having same issue, my highest elo player is 1517, my star player elo on reports is 1873 I believe, and the report says that an 1873 elo is still among the 5% worst in the game, (says top 95%). It's strange.

Ok there seems to be something off and it's happening quite frequently. Since you kinda benefit from this, it should be fine for now. Hopefully Henri will look into this at some point.
